Spaghetti Squash Coconut Sevai

First of, thanks to all my Facebook friends who drooled and went gaga over this dish - that is my best motivation to keep trying new recipes and blogging them

I have worked with Spaghetti squash in the past, but once to bake it and one other time to make a halwa, all well before I started writing this blog. However, this unbelievable gem of a veggie went off my radar for a long time. This was one of the easiest recipe decisions to make in so far as keeping the preparation simple yet tasteful.
The trick is to allow the squash to shine and be the hero of the dish and not overpower it with too many spices. Add a tsp of coconut oil and  fresh grated coconut enhanced the taste of the squash and made for a delectable meal. Without further ado here goes
My sweet husband putting in the muscle to unstring the squash

And voila

Ingredients

  • 1 medium sized squash cut down the middle vertically and spaghetti unstrung from the sides and into a bowl
  • 1/2 cup of fresh frozen grated coconut thawed
  • 2 Tbsp roasted cashews
  • 2-3 finely chopped green chilies (ours were homegrown)
  • 1/tsp of mustard seeds
  • 1/2 tsp of turmeric
  • 1tsp of urad dal
  • 2 tsp of olive oil
  • 1tsp of coconut oil
  • pinch of asafetida
  • 1/3 cup of water
  • Salt to taste
  • 2 tsp juice of freshly squeezed lemon
  • Cilantro for garnish

Method

  1. Splutter mustards, urad and hing in the said amount of olive oil
  2. Add the chilies and allow them to cook for 30 secs
  3. Add the squash noodles
  4. Add the the water and keep closed for about 3 minutes and allow it to cook until al-dente
  5. Open and allow the water to evaporate.
  6. Add salt and coconut  and cashews and turn them in to the squash

Swiss Chard & Beet Greens Kootu (stew)

What has become of me? I seem unable to get the right moment to sit and blog - Heaven knows, with the veggie garden producing hearty veggies, I have been cooking up a storm. Something to be said for the lazy hazy crazy days of summer! Kids around, chillaxing when we are not hustle around the garden or doing other "summery" things, like keeping up late and trying to sleep in late - an impossibility with my rooster husband who wakes up the sun! So much so, the layers of lethargy that has built up is so high, it needs super will power to knock it down and get down to being productive in the blog world. My interest in cooking remains alive and steady. And, my experiments continue, especially with the homegrown veggies.  And it is with pride I present to you this super food in a most delectable stew or kootu

Beet greens (which are red, lol) and the ever so colorful and beautiful swiss chard together make for an excellent combination. Couple those with coconut and spices and man, have you made yourself a healthy dish that is a perfect combination with either rice or chapatis.

Here is my simple recipe

Ingredients

  • 2 cups of chopped swiss chard
  • 1 cup of Beets greens chopped fine
  • 1 beet chopped fine (I threw this in since I had it)
  • 1bay leaf
  • 1/2 tsp of black pepper
  • 1 red chili to grind and 1 to saute
  • 1/4 cup coconut powder/ or grated coconut
  • 1/2 cup of cashew, hazelnut, & almond milk (optional) (available in TJ's)
  • 1 tsp of coconut /sesame oil) for cooking and 1 for tempering
  • 2 cup of water

Method

  1. In a saucepan, lightly fry the coconut, chili pepper and bay leaf in a tsp of oil
  2. Pour a cup of water and grind and set aside
  3. To the same pan, add the greens  and stir for a couple of minutes
  4. Add 1 cup of water and allow it to cook for a few minutes
  5. At this point, add the salt and stir in
  6. Now add the ground coconut mix and allow all of it to come to a boil or two.
  7. Remove from flame and transfer to a serving bowl
  8. Temper with a tsp of oil some mustards seeds, cumin and 1 red chili
  9. Serve with couscous, rice or chapatis.

Potatoes in Peanut & Onion gravy (Urulai Thiratal)

Let me start by saying this is was a runaway hit with my family. We are blog hopping for Avant Garde Cookies and I was delighted that my first hop in this category was to my blogger bestie, Priya Sreeram's  blog, Bon Appetite - First thing that struck me as i keep flipping web pages is - How did I miss this? My sweet friend is so -- because she is a dessert junkie! She has cakes, and brownies, and all kinds of delicious bakes and scattered in between are her savory/spicy dishes... I loved browsing and rereading some of her wonderfully written posts.

I had made a peanut and onion chutney not too long ago which was a super hit too and I thought, hmm, the potato monsters I have in my son, hubby and daughters would love this.  But for adding a few of my favorite tastes, I stayed pretty true to my soul sister's recipe and we enjoyed this to the last lick with chappatis- Thanks PS for enriching my repertoire with this fab dish. And to really confess, I am not big on potatoes at ll - clearly prefer sweet potatoes to the regular kinds and even I loved it

Off to the recipe now

Ingredients
  • 8-10 medium sized red potatoes
  • 1/2 can of diced tomatoes (or 1 big beef tomato)
  • 1 huge red onion (or 2 medium sized ones)
  • 1/2 cup of roasted peanuts (without husk)
  • 4-5 of your spicy-est red chilies
  • A pinch of turmeric
  • A pinch of asafetida
  • 2 tsp of olive or other oil
  • Curry leaves, mustard seeds for tempering
Method
  1. Boil Potatoes in pressure cooker or steamer
  2. Peel, cube and keep.
  3. In a kadai or deep pan,(nonstick to save on oil) add oil and heat
  4. Throw in the asafetida, red chilies and sauté
  5. Roughly chop the onions, and peanuts since they are to ground anyway
  6. Let it tenderize
  7. Add the tomatoes
  8. Cook until the water is evaporated
  9. Cool, grind and set aside

  1. In the pan now add 1 tsp of oil and temper the mustards and the curry leaves.
  2. Add the cubed potatoes and some turmeric (optional)
  3. Add some salt and cook for a few minutes until the potatoes absorb the salt - I also used 1tsp of rasam powder (you can use curry powder)  and cook for a minute longer
  4. Now add the onion and peanut paste and let it simmer along with the potatoes

Transfer into a serving dish and go hung-ho at it with chapatis/naan/pooris or even rice

Enjoy this recipe until the next time I am coming back with some Jams and Tangerine Marmalade - so stay tuned!

Cashew-Peanut Vegetable Stir Fry

A nutty idea but trust me when I tell you you could eat it all up and hanker for more - This is another of those one the spot recipes - a new take on stir-fry which was hugely successful with the family - The only time it takes is to cut the veggies... and when it comes to cutting multiple veggies, I love to do it since I always get so turned on by the brilliant colors of them all and I feel like an artist creating amy own color palette.

Here are the veggies I used -

  • 1 each of orange and yellow and green peppers
  • 1 perfectly juicy and ripe tomato (big)
  • 1 big red/purple onion
  • 2 small (long) eggplants

Nuts, herbs and spices

  • A fist full of
  • cashews, peanuts, sesame
  • 2tbsp Spicy Schezwan sauce
Plus 2 tsp of sesame oil to saute the veggies in

Method
In a wok/wide pan, heat oil and throw in the veggies
Cook until tender but still crunchy
Powder the nuts together
Add the sesame whole and the nut powder along with the sauce and stir until all the veggies are coated with these
Cook for a minute or two longer
Serve hot with noodles, chappatis or eat as is.

This is the simplest and tastiest and healthiest broccoli preparation if one is looking to Indianize this green and great veggie. It is light and delicious and can be paired with chappatis or rice or couscous or can even be had as is. Takes 10 minutes flat to make and is highly satisfying.

Method

  4. Add chilies and broccoli and turn in the pan
  5. Add the salt and the grated coconut and let all the flavors blend

Colorful Veggie Stir Fry – Indian Chinese Style

Some days the sun shines brilliantly and makes for the best day to click some good pictures – especially of food – A day like that presented itself and I was beside myself with joy since I had invited some friends over for lunch and I was planning on making this veggie stir fry. Colorful veggies can be a big turn on for the gastric juices and a visual treat. And I hope to achieve this with this recipe. For those who see my FB page, you will have seen this as my "cover photo" and on the slide above on my homepage :)

This is an all too simple recipe, the only hard or interesting part (depending on how you view it) is the veggie cutting – I made this a fun chore and you can see the result of it in the pictures below.  A few ingredients to spice it up and I was good to go.

Here now is my recipe

Ingredients
Veggies of your choice
Hot stir fry sauce
1tsp Sambar powder
1 tsp or squirt of Sirarcha sauce
1tbsp Ginger
1tbsp Garlic
1tsp sesame seeds
1tsp of Asian spices
Nuts (optional)
1tbsp +2tsp of sesame oil
Fresh green Thyme to garnish (can use basil or other too)

Method
Heat 1tbsp oil
Add the garlic and ginger and sesame seeds
Roast till garlic is golden
Add the chopped veggies
Add all the spice powders – The sambar powder infuses a fine Indian aroma to this dish while the Asian Spices confirms that it is indeed a Chinese dish with an Indian twist JThe addition of Potatoes also lends some Indianness to the dish.
NOTE: If you are using potatoes, like I did, you may want to cook it for a few minutes in the microwave or steam them ahead of time for a 3-4 minutes
Cook on high flame stirring/tossing them
Once they are tender, but still crisp, add the sauce
IMPORTANT – The veggies should be Al dente and retain their shapes and their own individual flavors – that’s what makes this dish special
Serve HOT Over noodles or as a side with Jasmine Rice J

Serving with Whole Masoor dal "soup" & Pappads

Rainbow Chard & Veggie Casserole With Paneer

This was a pleasurable dish to make. I had this super colorful Swiss Chard that I’d bought at Whole Foods. And I had all my garden veggies and was planning on some really interesting dish. It was the same morning that Radhika emailed me the secret ingredient for our Avant Garde Cookies posting and it was Paneer… I had made some a few days before and this seemed like the perfect garnish/addition to this veggie medley.  What’s more I even had my béchamel sauce that I’d blogged the day before and I thought it would make a perfect addition to the dish.

Here is my recipe.
Ingredients

  • Basically this can be done with any veggies or greens of your choice
  • I used Rainbow Swiss chard, cherry tomatoes, onions, orange and yellow bell peppers, green chilies (optional) – I also had some snake gourd I chopped up and used.
  • 1tbsp olive oil
  • 1cup of béchamel sauce (use any other sauce of your choice)
  • 1tsp curry powder (optional)

Method

  1. Stir-fry the veggies in about ½ tbsp. of olive oil
  2. Place this is a baking pan neatly
  3. I used the béchamel sauce to top my stir-fried veggies (I sprinkled some curry ma powder on top)
  4. Sautee the paneer in another 2 tsp of olive oil – I used some curry powder and salt to spice it up a bit
  5. Arrange the paneer on the top
  6. Add some cheddar if you like
  7. Bake for about 25-30 minutes at 350 F
  8. Garnish with Fresh Cilantro
The pictures are self-explanatory.
Enjoy with noodles or just by itself.
